As a child, mealtimes were always spent around the dining room table with everyone chatting and sharing their day. When I had children of my own, that's when I really got into baking. Birthdays were definitely a big deal in our house. I would spend hours making the design that my girls had chosen. This was in part an expression of love and also because I don't like the taste of many shop-bought cakes. Around 2015 I attended a figure modelling class with a local cake maker, and that was it, I was hooked. All I wanted to do was to have a better finish on my bakes, so I enrolled in classes – working with fondant, royal icing and sugar flowers.

I have an academic background with a degree in Business Studies and a Graduate Management Training Programme, which was actually within the food industry. Eventually, I realised it wasn't for me, and I needed to find something that provided me with a much-needed creative outlet. That was back in 2011, and shortly after, I launched Marie Antoinette Cake Design, and in the last couple of years, The Sugarcraft School so I can help other people in the industry to learn and grow. I'm a big believer in choosing something you want rather than doing what is expected of you. For this time of year, consider seasonal flavours such as black forest, chocolate orange, mint chocolate and of course rich, brandy-soaked fruit cake. Autumnal colours are phenomenal. There are so many rich shades in the leaves that are actually very similar to sponge hues. Naked cakes with a dusting of icing sugar, pine cones and berries is a simple yet elegant way of incorporating seasonal shades and textures.

How to incorporate flowers into your wedding cake

Once you've decided on the design, there are several options available ranging from fresh to hand-made sugar versions. Fresh flowers need to be sourced from a reputable supplier to ensure they have been treated correctly. From my point of view, each stem then has to be dripped in a safety seal, wrapped with floral tape and then attached to the cake usually at the last minute to ensure it stays as fresh as possible. One of the benefits of this option is the blooms will match the rest of your floral displays perfectly.

Creating a Christmas-themed cake

For a glamorous option, you could opt for a spectacular all-white cake with oversized snowflakes and snowballs. A dusting of edible glitter will add some sparkle in the candlelight. A white bakewill also provide a stunning backdrop for a more traditional Christmas theme and can be decorated with deep red sugar roses, green garlands of holly and ivy and red berries. If cool chic is more your style, then a Nordic theme with stag heads, hand-painted reindeer, prints and a green, red, cream and grey colour scheme could be the way forward.
